Is it possible to sneak vegetables into every meal? I think it might be! These oat waffles were enhanced by the addition of spinach, giving them a beautiful green hue. And I was told ‘you can’t even taste it’ so it passed the family test.
Makes 6 large waffles:
275g oats
250ml milk of your choice
125g coconut oil, melted and cooled slightly
50g spinach
3 large eggs
2 tbsp maple/brown rice syrup
2 tsp vanilla extract
1.5 tsp baking powder
0.5 tsp ground cinnamon
pinch of salt
Blitz the oats to a flour in a food processor. Add the other dry ingredients and mix. Add the wet ingredients and spinach and blitz until the spinach is combined. Cook in a waffle maker, or drop dollops into a frying pan for pancakes. Add berries, Greek yogurt and mint, or the topping of your choice!
