Adding fibre to your diet is one way to increase the diversity and quantity of your gut bacteria – the good guys! Next time you fancy a burger, why not swap it for one of these bean burgers, boasting five different plant based ingredients. I serve them with a bitter salad, some melted goat’s cheese and a spoonful of red onion ‘pickle’.
Makes 12:
600g black beans, drained
100g quinoa
1 onion, chopped
1 tbsp olive oil
20g fresh coriander, chopped
1 medium egg
50g breadcrumbs
50g parmesan, grated
Salt and pepper to taste
Cook the quinoa in boiling water for 15 minutes. Meanwhile fry the chopped onion in olive oil until translucent. Add all the ingredients to a blender and mix – I prefer to leave it with quite a lot of texture. Season to taste. Shape into twelve patties and refrigerate for 30 minutes. When chilled, brush with melted butter and grill for 10 minutes on each side until golden.
