Whether you choose not to drink alcohol or are just looking for alternatives to enjoy, these ‘mocktails’ are among my favourites. There’s a Kombellini, which is as good as the real thing in my opinion; a Ginger Fizz that leaves a warming tingle and Lemon and Rosemary Spritzer that gives a zesty punch! All recipes serve one.
Kombellini
1 tbsp peach purée
200ml sparkling kombucha
To make the peach purée, thaw frozen peach slices and blitz until smooth. Drop a tablespoon to the bottom of a champagne flute and top up with kombucha. Stir to mix. Feel free to use your own kombucha or try this from LA Brewery.
Ginger Fizz
65ml ginger cordial
100ml sparkling water
juice of half a lime
Serve with ice and a slice of lime. I used Rochester ginger cordial.
Lemon and Rosemary Spritzer
2 tbsp lemon and rosemary syrup
150ml sparkling water
For the syrup:
Juice of 4 lemons
Zest of 2 lemons
2 sprigs of rosemary
100ml runny honey
To make the syrup add all ingredients to a small pan and bring to the boil. Simmer for five minutes then take off the heat and allow to steep for an hour. Strain. Makes enough for three spritzers.
Serve the spritzer with ice and a small sprig of rosemary or slice of lemon.
