Our bodies use the essential amino acid tryptophan to make serotonin, our happy hormone. Sadly we can’t produce tryptophan ourselves, so we must ensure a steady supply of it in the foods that we eat. The list of foods containing tryptophan – oats, bananas, peanuts, almonds, dairy, seeds – just begged to be put together in this mood-boosting porridge that will give you a tryptophan-rich start to the day!
Serves 1:
1/2 cup jumbo or porridge oats
1/2 cup milk – full fat dairy or almond
1/2 water
1 tbsp ground pumpkin and sunflower seeds
1 tsp maca powder (optional)
1/2 just-ripe banana, mashed
1 tbsp peanut butter
Add the oats, milk and water to a small pan and cook over a low heat to your preferred consistency, stirring frequently.
Mix in the ground seeds and maca powder.
Serve with mashed banana and peanut butter.
